Why we like it
Chris Baldwin has made his living as a commercial artist and graphic designer since he graduated from Western in 1986, and he has lived on Whidbey Island since 1995. Island Time is where his three loves overlap: good coffee, great packaging and island life. He launched it in 2021, in the thick of the pandemic, and three months in the price of bags jumped 50 percent and green coffee 30 percent. Rather than fold, he slowed down and grew it one store at a time.
The coffee is roasted locally by a roaster with roots at Seattle's Best, several times a week, so an online order ships within a few days of the roast. The flavor goal is the classic Northwest cup: full bodied, without the bite. Chris compares it to a good, well rounded IPA rather than one that knocks you over.
Every name comes straight off the island. Ferry Line Blues is the cup for the ferry wait, Deception Dark wears the Deception Pass bridge, and Salish Orca Blend carries a photo of three L pod orcas taken off Whidbey's west side, with 10 percent of its net sales going to Orca Network in Freeland. You will find the bags on shelves from Bellingham to Olympia, mostly at independent grocers, and in nearly every market on Whidbey. Full bodied with almost no bitterness. Chris calls it his “mellow out coffee.”
