Santo Coffee Co

Santo is a soccer story with a coffee bar attached. The shop's own Our Story page says Fredy and Alexis Montero met in Seattle while he was playing for the Sounders, and that they founded Santo with Mikhail and Jessica Ghyvoronsky as a Colombian inspired specialty coffee shop. Daily Coffee News reported in September 2019 that the two couples met at the same Seattle church, run the shop as equal partners, and that Mikhail handles most of the day to day.

The house coffee is the Santo Blend, which the shop's site describes as several Colombian varietals with notes of red fruit, sugar cane, blueberry and caramel, sold in bags alongside a Bettina Blend and a decaf. In 2019 Daily Coffee News reported that Santo poured coffee from Devoción, a Colombian importer and roaster based in New York, and served a panela latte with Colombian panela sugar and orange bitters. The current site names no roaster and no drink menu, so the panela latte is worth asking about rather than counting on.

The room is the other reason to stop. Daily Coffee News described it in 2019 as about 1,300 square feet, designed by Wes Pierce, with floor to ceiling windows, polished concrete floors, a solid marble bar and Dorothy Draper wallpaper. At opening the pastries came from Semillon Bakery and the tea from Miro Tea; nothing current confirms either.

The shop's Instagram posted new hours from August 31, 2026: 8am to 3pm Monday through Friday and 8am to 4pm on weekends. The shop sits at 1325 NE 65th Street, and its site takes bookings for private events in the space.
