Dianna Del Giorgio has owned and worked at Caffe Adagio since it opened in 2006. The kitchen matters as much as the espresso here, with soups, salads and sandwiches built on focaccia made in house, and a Mayan hot chocolate spiked with chili and nutmeg.

Twenty years is a long time to stand behind the same counter. Dianna Del Giorgio opened Caffe Adagio on Railroad Avenue in 2006 and still runs it, which Cascadia Daily News profiled her for in May 2023. The Italian framing is not only decor, because sandwiches are built on focaccia made in the shop and there are soups and salads rather than a pastry case and nothing else. The one drink people come back for is the Mayan hot chocolate, made with chili and nutmeg. Free wifi and outdoor seating, closed Sundays, and the doors shut at 4pm.
