Downtown, Seattle, Washington
Anchorhead's first cafe, opened in October 2016 in CenturyLink Plaza on Seventh Avenue and still the company's downtown flagship. Come for the Quaffle, croissant dough rolled like a cinnamon bun and pressed in a waffle iron, in a dark, plant filled room.
Order the Quaffle. It was on the counter when this cafe opened in October 2016, when Daily Coffee News described croissant dough rolled cinnamon bun style, pressed in a waffle iron and served with maple syrup, and a travel blog updated in July 2025 was still sending people here for it. This 1,000 square foot bar in CenturyLink Plaza at 1600 Seventh Avenue was Anchorhead's first cafe, and the company's own site still calls it the downtown flagship.
Jake Paulson and Mike Steiner started Anchorhead in 2013 after careers as touring audio engineers, bottling cold brew and roasting in Steiner's garage. Roasting does not happen at this cafe: Daily Coffee News reported in 2022 that the company roasts at a facility in Duvall. The company's flagship espresso blend is Leviathan, which its site describes as 70 percent natural Ethiopia Guji and 30 percent washed Brazil. At opening in 2016 the bar ran a three group Synesso and a Poursteady automated pour over machine, so ask whether that setup is still in use.
The room leans dark. Anchorhead's location page describes dim lighting and industrial decor, and Seattle Met's February 2026 guide compared the company's matte black cafes to a Berlin basement nightclub. Expect blue leather sofas, plants on the tables, a pastry case at the counter and big COFFEE letters in the tower's windows. A 2025 visit recommended the pistachio matcha latte if you want something besides espresso.
Hours are 7am to 6pm every day on both the company site and Google. The tower sits a couple of blocks from the Seattle Convention Center, which makes this an easy stop between sessions, and paid garage parking runs beneath the building. Anchorhead also runs cafes on Capitol Hill and at Pike Place Market, and What Now Seattle reported in July 2026 that a West Seattle cafe on SW Alaska Street was on the way.
