Olympia Coffee Roasting

Olympia Coffee opened this corner cafe on May 4, 2018 as its fifth location and its first in Tacoma, which is where co owner Oliver Stormshak grew up. The buildout was a full commercial remodel of an existing building in the Proctor District, and the company installed a Diedrich five kilo roaster behind a row of barstools so customers could watch it work. Whether that roaster still runs is unclear: the Proctor page still invites you to watch the roasting, while the company's own story page says all of its coffee is now roasted at the downtown Olympia roastery.

The house blend is called Little Buddy, named for Stormshak's sister's 1986 Honda Civic. Seasonal drinks rotate across all the company's cafes, and the pastry case is stocked from Moonrise Bakery, the Seattle bakery Olympia Coffee took over in 2020: croissants, a gruyere pull apart, a kouign amann and a seasonal scone. Nothing is baked on site, which is worth knowing only because the pastries are good enough that people ask.

The company itself dates to 2005 and has belonged to Stormshak and Sam Schroeder since 2010. It is a certified B Corporation. The Proctor location sits a short walk from the Saturday farmers market, and weekends are busy for that reason.

Hours are 6 to 6 Monday through Saturday and 7 to 6 on Sunday.
