In 1895 the brewer Leopold Schmidt tasted Olympia's artesian water and founded the brewery that made It's the Water a slogan. A 1939 survey counted ninety six artesian wells in the city and numbered them. Number eighty sits inside this building, still running about thirty five gallons a minute at a steady fifty three degrees, drawing water carbon dated at more than three thousand years old.

Chris Knudson opened the brewhouse around it in March 2018, in what had been essentially a warehouse, four walls and a very good roof. In 2019 the brewery recreated Schmidt's first beer as Leopold's #1 Lager, brewed from his handwritten notes translated from German with help from a former Olympia Brewing brewmaster.

Beyond the history projects there is a ten barrel house range that has taken Washington Beer Awards medals, food that runs from deep fried Brussels sprouts to chicken and waffles, trivia on Tuesday and bingo on Wednesday.
