Vic’s Pizzeria

Vic's has been Olympia's neighborhood pizza place since 1999, and there are now three of them: the Westside shop on Division Street, Wildwood on Capitol Boulevard, and the newer Eastside shop with its own bar. The pies come whole, by the slice, or folded into calzones, and the regulars who grew up in New York and Boston say it is the closest thing to home they have found in Washington.

Everything starts from scratch. The dough is hand stretched, and six sauces are made fresh every week: classic red, fresca, Tex Mex, basil pesto, spinach and walnut, and sun dried tomato. The Tex Mex has a vegan version built on garbanzo beans and nutritional yeast, and the gluten free dough is made with Caputo flour. Most of the pizzas are named after furry friends of the house. Seasonal specials come and go, like the Big Fig on a house fig jam base while the figs last.

The taps and the freezer stay local: Headless Mumby, Top Rung, Matchless, ilk and Whitewood Cider on draft, Olympic Mountain Ice Cream for after, and Olympia Coffee Roasters at the Eastside shop. Cannoli, yes.
