Gaucho Coffee Co.

Liz Follansbee spent years in coffee before opening a shop of her own, and in October 2024 hers became the first coffee counter in the Side Street block on Railroad Avenue. She has called it the realization of a lifelong dream, which is the sort of thing people say until you taste the syrups, all of which she makes herself.

The beans are Cafe Lusso, roasted over in Redmond. The food comes from valley makers: breakfast burritos, egg bites, chia pudding, scones and cinnamon rolls, with gluten free versions of most of it.

What makes it a neighborhood room rather than a counter is the layout. There is a corner for children, and a separate quiet room the shop lends out free for meetings if you ask ahead.
