Biercuterie is an artisan cheese shop and craft beer destination in downtown Freeland, owned by Brian and Sarah Bystrom. The couple met in Los Angeles, where Brian first talked about becoming a cheesemonger, then moved to his hometown of Redmond before settling on a farm on Whidbey Island in August 2020. They opened the shop in spring 2024, and the name blends bier, the German word for beer, with charcuterie.
The cheese counter is the heart of the place, stocked with dozens of cheeses from as close as Skagit Valley and as far as Switzerland, and whoever is working will offer samples and talk you through each one. Cured meats, chocolate, jams, olives, and pantry staples fill out a proper cheese board, and there is vegan cheese too. Beer lovers can build their own four or six pack from a weekly rotating selection, alongside a short wine list, cider, and nonalcoholic drinks. Grab and go cheese and meat boxes, custom charcuterie boards, bloomy cheese cakes, rotating gelato, and Friday pizza dough by preorder round things out.
The shop sits at 1664 E. Main Street #3, between the Whidbey Clay Center and Kaila's Trims. It is closed Tuesdays and posts current hours and occasional closures on its website, so check before you go. Private tastings and board orders can be arranged ahead, and a cheese of the month club suits regular visitors.
